HACCP (Hazard Analysis and Critical Control Point), initiated by the US Food and Drug Administration, is a program that combines failure mode and effects analysis for food and a product safety management system used in the commercial food processing industry. The ASQ Food, Drug, and Cosmetics Division has developed a certified HACCP Auditor examination and this handbook has been put together to assist the certification candidate gain the knowledge needed to pass the examination. Introductory chapters provide a history and overview of HACCP, followed by chapters reviewing the principles concerning hazard analysis, critical control points, critical limits, monitoring procedures, corrective action procedures, verification procedures, and record keeping and documentation procedures. The major auditing issues are then described, followed by discussion of application of HACCP in different sectors of the food processing industry and in the medical device industry.
